Tomorrow is the BIG Day!

And last but not least, my favorite recipe...



Bacon Wrapped Poppers

12 fresh jalapeños
2 pkg. (8 oz. each) cream cheese, softened
1 pkg. sliced bacon

Pre-heat oven to 450 degrees.
Wash jalapenos.  Cut in half and remove seeds and stem.
Fill jalapeño with cream cheese.
Wrap cream cheese stuffed jalapeño with ½ slice of bacon.
Place on aluminum foil lined baking sheet, sprayed with non-stick cooking spray.
Bake for 30-35 minutes, or until bacon is cooked.

NOTE: It may be easier for your guests if you put a tooth pick in the jalapeño,
 so your guests can eat them easier and it will help to hold the bacon better.

Let Super Bowl Weekend Begin!!

Today is Friday and the Super Bowl is now only 2 days away!!!

Here is another great recipe to share at your Super Bowl parties this weekend.



Brown Sugar Little Smokies

1 package sliced bacon
1 package cocktail hot dogs
1 cup brown sugar (or to taste)
Toothpicks

Preheat oven to 350 degrees.
Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
Slice bacon into thirds.  Wrap one of the slices of bacon around the hot dog.  Keep bacon wrapped by sticking a tooth pick through the hot dog.  Sprinkle with brown sugar.
Bake for 40-45 minutes or until bacon is nice and crispy.
Serve warm.

Only 4 More Days...

... until the SUPER BOWL!



Cheese Ball

2 pkg. cream cheese, softened
1 pkg. of 90 calorie deli ham, diced
1 small onion, diced
2 cups cheddar cheese, shredded
Worcestershire sauce, to taste
Garlic powder or salt
Hot Sauce, to taste

Combine all ingredients until well mixed.
Shape into a shape of a ball.
Place in the middle of a plate and put Club crackers around to serve.

NOTE: I put all my ingredients in a large baggie, close, and then mix with my hands.  That way I don’t get all messy when mixing up the ingredients.  You can then form the ball in the baggie and refrigerate until ready to serve.  Once you are ready to serve, cut baggie away from ball and place on serving platter.

And the Super Bowl Countdown Continues…

Only 5 more days until the SUPER BOWL!



Mini Rye Bread Sandwiches

1 loaf Party Rye Bread
1 lb. deli sliced roast beef (medium thickness)
1 bottle horseradish
1 bottle Dijon mustard

Place 1 slice of bread on a baking sheet (or whatever you are going to store/serve sandwiches on)
Layer 1-2 slices of roast beef on bread.
Top with a dollop of horseradish and mustard.
Repeat until bread is gone.

NOTE: I typically store/serve my sandwiches in a 9x13 pan with lid, because of the limited space, I stack the sandwiches on top of each other.  I do this by placing a sheet of waxed paper in between layers to keep from touching.  It also prevents the bread from drying out.

You could also put a green olive on top of the sandwich and hold the
sandwich together with a toothpick.
